The Art of Technique

The method

  1. 01

Syrup & poaching — prepare the day before (D-1)

Bring the water, sugar, and honey to a boil. Off the heat, infuse with vanilla, saffron, and lemon for 10 minutes. Peel the pears, trim their bases, and immerse them upright in the syrup. Cover with a parchment lid (parchment paper with a hole in the center). Cook for 15 minutes at a gentle simmer. Let mature for 24 hours in the refrigerator in the syrup.

  2. 02

    Saffron diplomat cream — D-Day

Rehydrate the gelatin in cold water. Infuse the saffron in the hot milk for 10 min. Whisk the yolks and honey, add the cornstarch, pour in the hot milk. Bring to a boil for 1 to 2 min, whisking constantly. Remove from heat, incorporate the gelatin and butter. Cover with plastic wrap directly on the surface, and cool completely. Whisk until smooth and gently fold in the softly whipped cream. Pipe into a pastry bag and refrigerate.

  3. 03

    Orange Lace Tuile

Mix the melted butter, orange juice, icing sugar and flour. Drop small, spaced spoonfuls onto baking paper. Bake at 200 °C until golden brown (the mixture will bubble). Immediately mold while hot on a curved shape.

  4. 04

    Training

Pipe a dome of diplomat cream in the center of the plate. Immediately sprinkle with nasturtium brunoise. Place the pear on top. Generously spoon the poaching syrup, reduced to a honey-like consistency, over the pear for a glossy glaze. Top with a lace tuile. Decorate with whole nasturtium flowers and, if desired, a few flakes of gold leaf.

✦
Saffron tip

Taliouine saffron should be used sparingly (about 0.1g per person). To release all its aromas, always infuse it in a warm — never boiling — liquid for at least 10 minutes. Its intense golden color and slightly honeyed fragrance indicate that it is of premium quality.

Pairings & Suggestions

Alcohol-free suggestions

This dessert pairs beautifully with a lightly sweetened peppermint tea, whose fresh and herbaceous notes balance the richness of the saffron. For a more enveloping drink, a rose and cardamom infusion harmoniously extends the recipe's oriental aromas. A fresh pear juice echoes the poached fruit and creates a subtle pairing. In summer, a sparkling water infused with ginger and lemon brings a lovely vivacity at the end of the meal.
